This versatile salad is one of my favorites to make.  Take a bunch of fresh ingredients, toss them together and you’ve got lunch.

The ingredients to chop are:  1 avocado, tomatoes (I had the sweet grape variety on hand) and a bit of onion.  I like kick, so I added about 1/4 of a medium sized onion…diced small.  Oh and cilantro…if you like it.  I feel like people either love or hate cilantro.  I love it (hello, chipotle cilantro lime rice!) so I add about 1/4 cup of chopped cilantro.

Crack open a can of black beans (drain and rinse them) and add some frozen corn…about a cup.  The dressing for the salad is 2 squeezed limes and about 1 tablespoon of olive oil.  Season with salt and pepper and you’re good to go!

I like to eat this for lunch or for dinner, I’ll add a warm tortilla.  I made quesadillas for the kids tonight, so I added a scoop of this salad inside the cheese and they loved it…said it tasted like chipotle!
